A slightly acidic taste hidden in a jar. Pickled white grapes is an alternative you should try if you are bored of classic green pickled cucumbers. It is simple to make. Most homes already have the ingredients. But the result is surprising.
We start with just four basic ingredients. 1 kilo of white grapes. 1 liter of homemade grape vinegar. A head of garlic. 20 grams of rock salt. Juice of one lemon.
Why white grapes? It tastes lighter. Color clarity is nice. But black grapes are also okay. The difference is only visual.
How to Make Pickled Grapes?
The secret of pickles is when they meet the vinegar. There is a waiting period like other pickles. But the texture of grapes is more fragile. Care is required.
- Prepare Marinade: Combine vinegar, peeled garlic, lemon juice and rock salt in a bowl. Stir a little to dissolve the salt. The smell of garlic should permeate the vinegar.
- Place in Jar: Take your one liter glass jar. Do not pour the grapes one by one. Leave it in bunches. Leave space between them. Vinegar should permeate everywhere.
- Pour and Close: Pour the vinegar mixture you prepared over the grapes. Seal the jar. It must be leak-proof.
- Soak: 15 days on a dark shelf. Light spoils the taste. A dry and cool corner, not damp, is ideal.
- Bon Appetit: Open the lid after 15 days. Move it to the refrigerator without air.
Why Homemade?
Pickles in markets generally contain high amounts of vinegar. Taste balance is off. The taste is more natural in homemade grape pickle. The acidity of lemon takes out the sharpness of vinegar. Rock salt gives a mineral taste.
Garlic? Without it, the pickle will be incomplete. Adds an aromatic depth.
Practical Tips
- Grapes should be ripe but not rotten.
- Use glass jars. Plastic can absorb flavor.
- Do not open before 15 days. The taste doesn’t sit right.
- After opening, store in the refrigerator. Fermentation continues at room temperature.
